Ingredients:

  • 2 large boneless chicken breasts, skin on
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large shiso leaves
  • 4 slices thin sliced Jambon or Parma ham
  • 6 thick slices of Swiss cheese
  • 2 eggs
  • 1 1/2 cup cooking sake
  • 1/2 cup rice bran, peanut, or canola oil
  • 1/2 cup white flour
  • 1 cup panko breadcrumbs

Ingredients for Japanese Style Chicken Rollups

Instructions:

  • Marinate the chicken breasts in the sake for 20 minutes and pat dry.
  • Preheat oven to 320 deg F/160 deg C.
  • Using a tenderizing mallet, pound the chicken breast, skin side up, to a uniform half inch thickness and roughly rectangular in shape.

  • Lay the chicken out, skin side down.
  • Layer the cheese, ham, and then shiso leaves on top of the breast.

  • Roll up the chicken breast tightly, skin on the outside.
  • Use cooking twine to tie the breasts tightly and hold the shape.  Tie the ends very tightly.

  • Pat the breasts with salt and pepper.
  • Dip each breast in flour being sure to completely coat it.
  • Dip each breast in the egg and then roll in the panko, being sure to completely coat it.

  • Add the oil to a small frypan.  Heat over medium heat until hot.
  • Sauté each chicken breast, one at a time, for about 6 minutes, turning one every 90 seconds, so that each side is fried to golden brown.

  • Put the chicken into a greased oven pan and bake for 45 minutes.  Chicken should reach 165 degrees F/74 degrees C in the center.
  • Remove, cool for 10 minutes.  Coat the top with any drippings or melted cheese in the baking pan.

  • Cut into slices and carefully remove twine.
  • Serve immediately.
