Ingredients:

Salad

  • 1 lb jumbo shrimp
  • 1 lb sea scallops
  • 12 large asparagus spears
  • 1 leek
  • 2 potatoes
  • 1 large or 3 small red peppers
  • Olive oil for roasting
  • Salt, pepper, paprika to taste

Dressing

  • 2 TBSP Pesto (use pre-made or see the recipe in the notes)
  • 1 TBSP Extra Virgin Olive oil
  • Salt and pepper, to taste

Instructions:

  • Preheat your oven to 400°F (200°C).
  • Prepare the vegetables for roasting:
    • Leek: Trim off the dark green leaves and the root end. Cut the leek in half lengthwise and rinse under cold water to remove any dirt or grit. Pat it dry with a paper towel.
    • Potatoes: Peel the potatoes and cut them into bite-sized cubes.
    • Red pepper: Cut the red pepper in half, remove the seeds and stem, and cut it into thin strips.

  • Place the prepared leek, potatoes, and red pepper on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
    Roast the vegetables in the preheated oven for about 25-30 minutes or until they are tender and slightly browned. Stir the vegetables halfway through cooking to ensure even browning.
  • While the vegetables are roasting, prepare the shrimp and scallops:
    • Preheat a separate oven-safe pan over medium-high heat.
    • Season the shrimp and scallops with your choice of spices, such as salt, pepper, and paprika.
    • Add a drizzle of olive oil to the pan and sear the shrimp and scallops for about 2-3 minutes on each side or until they are cooked through and slightly browned.
    • Transfer the pan to the oven and roast the shrimp and scallops for an additional 5-7 minutes or until they are fully cooked.

  • In the meantime, trim the woody ends of the asparagus spears and blanch them in boiling water for 2-3 minutes. Then, transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
  • Once the roasted vegetables, shrimp, and scallops are done, remove them from the oven and let them cool slightly.
  • Slice the roasted leek into bite-sized pieces and combine it with the roasted potatoes, roasted red pepper, blanched asparagus, roasted shrimp, and roasted scallops in a large bowl.
  • In a small bowl, whisk together pesto and olive oil to make the dressing. Adjust the ratios to your taste.
  • Drizzle the dressing over the seafood and asparagus salad and toss gently to coat everything evenly.
  • Serve the salad immediately and enjoy!
