Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup fresh peanuts
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 teaspoon baking soda

Instructions:

  • Roast the peanuts by spreading in a single layer on an ungreased cooking sheet and baking at 350 degrees for 15 minutes.  Mix the peanuts every 5 minutes and cook until fragrant and golden brown. Remove from the oven and cool to room temperature.

  • Prepare a baking sheet by lining it with parchment paper or greasing it with butter.
  • In a medium-sized saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar has dissolved.

  • Insert a candy thermometer into the mixture and continue cooking until it reaches the hard crack stage, which is around 300°F (150°C).
  • Once the mixture reaches the desired temperature, remove the saucepan from heat and immediately stir in the peanuts, vanilla extract, butter, and baking soda. The mixture will bubble up, so be careful.
  • Quickly pour the hot mixture onto the prepared baking sheet and spread it out evenly using a spatula.

  • Allow the peanut brittle to cool completely at room temperature until it hardens.
  • Once cooled and hardened, break the peanut brittle into small pieces and store in an airtight container.

Notes:

  • Use fresh and high-quality peanuts for the best flavor and texture.
  • Be careful while preparing the caramel mixture as it can get extremely hot. Use a candy thermometer to ensure the mixture reaches the correct temperature.
  • Spread the caramel mixture thinly and evenly on a greased baking sheet to achieve a crispy and brittle texture.
  • Allow the peanut brittle to cool completely before breaking it into pieces. This will ensure that it hardens properly.
