As an avid food enthusiast and an adventurous cook, I am always on the lookout for unique ingredients and flavors to incorporate into my culinary experiments. After a recent trip to Nara, Japan, I stumbled upon a special ingredient called kudzu starch. Intrigued by its reputation as a versatile and healthy thickener, I couldn’t resist bringing back a small bag of kudzu powder to try in my kitchen.

Kudzu, a climbing vine native to East Asia, has been used in traditional Chinese and Japanese medicine for centuries. However, it was its culinary potential that caught my attention. Kudzu starch, derived from the roots of the plant, is known for its ability to create smooth and silky textures in various dishes.

Eager to put this newfound ingredient to the test, I decided to create a dessert that would showcase the delicate flavors of kudzu while complementing them with a burst of tangy freshness. Thus, my own version  of Lemon Kudzu Pudding was born. I experimented with various ratios of kudzu, lemon, sugar and water until I came up with this recipe.  I knew I had a winder when I poured it into individual serving bowls and allowed it to cool. The pudding set beautifully, forming a velvety, jiggly texture that promised to deliver a delightful dining experience.

Ingredients:

  • 1/4 cup kudzu powder
  • 2 1/4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 tsp vanilla extract
  • 2 TBSP lemon juice
  • 2 TBSP unsalted butter

Instructions:

  • In a small bowl, combine the kudzu powder and 1/4 cup of the whole milk. Stir until the kudzu powder is dissolved and set aside.

  • In a medium-sized saucepan, combine the remaining whole milk, sugar, and salt. Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to dissolve the sugar.
  • Slowly pour the kudzu mixture into the saucepan, stirring continuously. Continue to cook over medium heat, stirring constantly, until the mixture thickens to a pudding-like consistency. If it spatters while boiling, lower the heat a bit.  This should take about 5-7 minutes.

  • Remove the saucepan from the heat and stir in the vanilla extract, lemon juice and butter until the butter is melted and fully incorporated.

  • Pour the pudding into individual serving bowls or a large serving dish. Allow the pudding to cool for a few minutes at room temperature, then cover and refrigerate for at least 2 hours, or until chilled and set.

  • Serve the lemon kudzu pudding chilled.  Top off with Lemon Zest if desired.

Notes:

Kudzu powder can be found in natural food stores or online. Make sure to follow the package instructions for the specific brand you are using, as the ratio of kudzu powder to liquid may vary slightly.
