Prime Rib Terrine

- 1 lb Cooked Prime Rib, minced or shredded
- 1/2 lb sliced bacon
- 1 Onion
- 2 Shallots
- 1 Clove Garlic
- 2 Eggs
- Fresh Herbs to taste (Thyme, Rosemary, Parsley, Chives, Sage, etc)
- 1/4 cup cream
- 1 TBSP fresh butter

Instructions:
- Peel and slice the shallots and garlic and mince the herbs. Peel and chop the onion. Beat the eggs and cream together with a fork.
- In a large skillet, sauté the shallot and garlic in the butter over medium high heat for 2-3 minutes until the garlic is lightly browned.
- Mix in the herbs and sauté for another minute.
- Stir in the chopped onion. Sauté for five more minutes until the onions become soft and translucent.
- Stir in the prime rib and continue to sauté until all the ingredients are well combined and hot.
- Remove from the heat. Allow the skillet to cool for a couple of minutes.
- While waiting for the skillet to cool, preheat the oven to 300 degrees F/ 150 degrees C.
- Line a greased terrine pan with bacon ensuring the bacon is draped over the sides.
- Gradually stir the egg and cream mixture into the beef. The terrine mixture will become soft and moist.
- Spoon or pour the terrine mixture into the terrine pan. press down with a wooden spoon to remove and air. The terrine mixture should be packed firmly.
- Wrap the bacon around the top of the terrine. Use additional bacon if necessary to completely surround the mixture.
- Cover the terrine pan and place in a larger pan in a bath of boiling water. The water should be at least halfway up the side of the terrine pan.
- Cover the entire pan with foil and bake in the oven for 90 minutes.
- Remove from the oven. Allow to cool for 20-30 minutes.
- Remove from the terrine pan, wrap in plastic wrap, and place back in the terrine pan. Refrigerate for 24 to 48 hours.
- Slice with the plastic on. Remove the plastic and serve by the slice. Serve with toast points or as part of your favorite charcuterie plate.
Notes:
- To prepare shredded prime rib, remove fat from your leftover prime rib and shred in a food processor with 1 TBSP Olive Oil and 2 TBSP of juice per pound of meat. As an alternative, you can mince the prime rib in a meat grinder.
- Refrigerate leftover terrine in an airtight container for up to three days. Or freeze individual sliced for up to six months. Defrost overnight in the refrigerator.
