Are you a fan of Chinese cuisine? If so, you may have heard of XO sauce, a beloved condiment that originated in the southern Chinese province of Guangdong. Known for its rich, savory, and slightly spicy flavors, XO sauce has become a staple in many Chinese dishes, adding a unique and delightful taste to every bite. In this article, we will explore the origins of XO sauce, its significance in Chinese cuisine, and how it elevates the classic Mapo Tofu recipe to create a mouthwatering dish called Tofu in XO Sauce.
XO sauce, often referred to as the “caviar of the East,” was first created in the 1980s in Hong Kong. Its name may evoke thoughts of the luxurious XO cognac, but in reality, the “XO” in XO sauce stands for “extra old.” The sauce is a blend of premium ingredients, including dried seafood such as scallops, shrimp, and fish, combined with chili peppers, garlic, shallots, and other aromatic spices. The mixture is then slowly cooked to perfection, resulting in a thick, flavorful, and umami-packed sauce that is truly a culinary delight.
Traditionally, XO sauce is used as a condiment or flavor enhancer in various dishes, ranging from stir-fries and noodles to seafood and vegetables. Its complex and intense flavors make it a versatile addition to many recipes, elevating them to new heights. One such recipe is Tofu in XO Sauce, which offers a unique twist on the classic Chinese dish, Mapo Tofu.
Mapo Tofu, a Sichuan specialty, is a spicy and flavorful tofu dish that is typically cooked on the stovetop. It features a combination of minced pork, tofu, and a spicy bean paste called doubanjiang. While this spicy dish shares some similarities with Mapo Tofu, it stands out due to the addition of XO sauce and a unique cooking method.

In this recipe, the recipe takes on a slightly different approach by incorporating the use of an oven. By preheating the oven to 425 degrees Fahrenheit, the tofu is able to absorb the flavors of the XO sauce more deeply, resulting in a rich and satisfying dish. The combination of the soft and delicate tofu, the aromatic XO sauce, and the perfectly browned ground pork creates a harmonious blend of textures and flavors that is sure to please your taste buds.
Not only does the oven preparation method enhance the flavors of the dish, but it also allows for easier and more convenient cooking. By covering and baking the tofu in the sauce, the flavors meld together beautifully, and the tofu becomes tender and infused with the savory sauce. The final touch of drizzling sesame oil adds a delightful nutty aroma and elevates the dish to new heights.
This spicy recipe offers a tantalizing twist on the traditional Mapo Tofu recipe. With the addition of XO sauce and the unique cooking method in the oven, this dish takes on a whole new level of flavor and complexity.
