Chili con Carne

- 1 lb sirloin steak
- 1 can of cooked kidney beans, drained and rinsed
- 1 cup tomato juice
- 14 oz diced tomatoes (canned or boxed)
- 1 Onion
- 1 Celery Stalk
- 1 clove Garlic
- 1 TBSP Chopped Jalapeños
- 1 TBSP Hot Sauce
- Chili Spice (see below)
Chili Spice
- 1 TBSP ground paprika
- 1 TBSP chili powder
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp brown sugar
- 1 tsp salt
Instructions:
- Trim the fat off the steak and save.
- Peel and chop onion and garlic. Dice the celery. Dice the steak into small half inch cubes.
- Add the fat and garlic to a stockpot and heat on medium high for 5 minutes stirring often. The fat from the meat will begin to liquify and brown the garlic.
- Add in the beef and sauté for 2-3 minutes until brown on the outside.
- Add the celery and onion and continue to sauté, stirring often, for five minutes. The celery and onion will begin to soften.
- Stir in the chili spice, jalapeños and hot sauce. Sauté for another minute until the ingredients are completely combined. Lower the heat to medium.
- Add the tomato juice and diced tomatoes. Bring mixture back to a boil.
- Gently in beans. Reduce heat to simmer. Cover and simmer chili for one hour. Stir occasionally to make sure that it does not stick to the pot.
- Serve.
