Ingredients:

  • 4 cups chicken broth
  • 80g thin rice thin vermicelli (beefun)
  • 5oz/150g mochi rice cakes (tteok)
  • 4 cups chopped bok choy
  • 1/2 lb ground pork
  • 4 wood ear mushrooms (kikuragi), cut in strips
  • 1 carrot, julienned
  • 1 bunch of chopped scallions
  • 2 TBSP Chili Sauce
  • 1 TBSP XO Sauce paste
  • 1 TBSP Oyster Sauce
  • 2 TBSP Sesame Oil
  • 1 TBSP Fish Sauce

Optional Toppings

  • Fresh Bean Sprouts
  • Fresh Corriander

Instructions:

  • Add the wood ear mushrooms, carrot, and the remaining half of the chopped scallions to the pot with the ground pork. Cook for a few minutes until the vegetables start to soften.
