Ingredients:


For the Salad:
• 2 1/2 cups imitation crab sticks, shredded
• 1 TBSP wasabi furikake
• 2 TBSP salmon roe (ikura)
• 2-3 sliced cucumbers
• Salt and pepper to taste

For the Mentaiko Dressing:
• 1/4  cup mentaiko mayo
• 2 tablespoon soy sauce
• 2 tablespoon rice vinegar
• 2-4 tablespoons chopped cilantro

Instructions:

  • Prepare the Salad Base: Slice the cucumbers and set them aside.
  • Make the Mentaiko Dressing: In a small bowl, mix the mentaiko mayo with soy sauce, rice vinegar  and chopped cilantro. Adjust the amount of soy sauce and rice vinegar to achieve your desired balance of flavors. For the cilantro, start with 2 tablespoons and add more to taste.

    Combine Salad Ingredients: In a separate bowl, combine the shredded crab sticks and wasabi furikake. Mix gently.
