Ingredients:

  • 2 cups uncooked white rice
  • 1/2 lb sashimi grade salmon
  • 1/2 cup rice vinegar
  • 1 1/2 TBSP white sugar
  • 1 tsp salt
  • 2 TBSP carrot
  • 2 TBSP renkon (lotus root)
  • 1/4 cup shredded nori
  • 1 tsp olive oil

Instructions:

  • Prepare the white rice in a rice cooker or in a saucepan.
  • Peel the carrot and renkon, julienne into 3/4 inch strips

  • In a small saucepan, heat the vinegar, sugar and salt over medium heat to a boil until the sugar and salt are dissolved
  • Mix in the carrot and renkon, continue to heat for two minutes.  Remove from heat and cool to room temperature (about 30 minutes)

  • Cook the salmon in the olive oil over medium high heat for three minutes on each side.  Cover and cook over low heat for an additional 5 minutes.

  • Put the salmon in a large mixing bowl and mash with a fork.
  • Add the rice and vinegar mixture.  Mix with a shamoji (plastic rice spoon) or a wooden spoon well until the rice is completely coated and the vinegar is completely dissolved into the rice.

  • Add in the nori and stir gently.
  • Serve.
