  • 1/2 cup caster sugar
  • 2 egg yolks
  • 2 tsp sweet vanilla bean paste
  • A pinch of salt

  • In a saucepan, whisk together the heavy cream, milk, and matcha over medium heat the matcha is completely blended into the mixture and there are no lumps.  Do not allow the mixture to boil.

  • Whisk the eggs with a couple of tablespoons of the cream mixture to temper.  Add back into the mixing bowl and whisk until smooth.

  • Refrigerate the mixture for at least an hour.
  • Allow the mixture to cool completely, then pour it into an ice cream maker and churn according to the manufacturer’s instructions.
