– 3 tablespoons smoked sweet paprika
– 1 tablespoon garlic powder
– 1 tablespoon onion powder
– 1 tablespoon crushed fennel seeds
– 1 tablespoon dried oregano
– 1 tablespoon dried basil

Sweet Italian Sausage:

– 1 pound ground pork
– 3 TBSPs Italian Sausage Spice 
– 2 tablespoons cold water (optional, for moisture)

Instructions:

**Prepare the Spice Mix**

– Combine the spices and mix until thoroughly combined.  Make sure there are no lumps.  Cover and store in a cool dry place for up to three months.

**Mix the Ingredients**

– In a large bowl, combine the ground pork with the Italian Sausage Spice and water.
– Mix thoroughly by hand or with a spoon until all spices are evenly distributed and the mixture holds together.

**Taste Test**
