Sweet and Sour Chicken Teriyaki

Tender chicken cooked in a sweet teriyaki sauce and loaded with pineapple and colorful veggies. Sweet, savory, fruity- who could ask for a more complete dish?

This colorful stir fry combines the flavors of honey and soy with the sweet and tart taste  of fresh pineapple.  Teriyaki is very popular in Japan, and can be found at many cafes and restaurants across the country. In Japan teriyaki is generally made with meat and sauce, and sweet and sour chicken is made with pineapple and red pepper. This combines the best of both dishes – chicken teriyaki with sweet and sour veggies added.

Sweet and Sour Chicken Teriyaki

This delicious Teriyaki Chicken is prepared with pineapple, red pepper, leeks and carrot which all contribute to the beauty of the dish. The pineapple is required, but veggies you could substitute would included green pepper, celery and tomatoes. Be creative and enjoy this dish with your friends and family.

Ingredients:

  • 1 3/4 lbs Boneless Chicken Breast (800g)
  • 1 cup chopped Pineapple (150g)
  • 1 Red Pepper
  • 1 Carrot
  • 1 Leek
  • 3/4 cup of soy sauce (150ml)
  • 3/4 cup mirin (150ml)
  • 2 TBSP honey
  • 1 TBSP sesame oil
  • 2 TBSP brown sugar
  • 1 TBSP cooking oil
  • 1 TBSP katakuriko
  • 3/4 cup chopped green onions
  • fresh cilantro (optional)

Instructions:

  • Peel carrot.  Chop carrot, leek and pepper into 3/4 inch pieces.

  • In a wok, sauté the chicken in oil over high heat for about 2 minutes until the chicken is white on the outside.

  • Stir in carrots, red pepper, and leek and cook for 2 more mins on high stirring constantly.
  • Stir in the honey and brown sugar and cook for two more minutes.

  • Now add in the sesame oil, shoyu, mirin, pineapple.  Bring to a boil and boil for 1 min on high heat.
  • Turn the stove down to to medium and boil uncovered for 5 minutes stirring occasionally.

  • Add 1 tbsp katakuriko that has been dissolved and stirred into 1/2 cup warm water.

  •  Continue to cook for two more minutes on medium. Add the scallions

  • Serve.  Garnish with fresh cilantro if desired.

Notes:

  • The dish is both delicious and easy on the eye. One suggestion is to hollow out a pineapple and serve this amazing entree inside the fruit.
