Ingredients:

  • 8 ounces soba noodles
  • 2 tablespoons mustard oil
  • 1 pound oysters, shucked, drained and patted dry
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cups komatsuna (mustard greens)
  • 3 scallions, sliced
  • 3 cloves garlic, minced
  • 1 tsp curry powder
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Sesame seeds, for garnish (optional)
  • 1/2 tsp cayenne pepper, for heat (optional)
  • Yakisoba sauce (optional)

Instructions:

  • Cook the soba noodles according to the package instructions. Drain, rinse with cold water, and set aside.
  • Heat 1 TBSP of mustard oil in a large skillet or wok over medium-high heat.
  • Add the oysters to the skillet and stir-fry for 2-3 minutes, until they start to turn opaque. Remove the oysters from the skillet and set aside.

  • In the same skillet, add the bell pepper, komatsuna, scallions, minced garlic, and 1/2 tsp curry powder. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
