Let’s dive into the key ingredients that make this dish truly exceptional. The star of our recipe is, of course, the sea scallops. These succulent morsels from the sea are known for their tender texture and subtle brininess. When cooked to perfection, they become the perfect canvas for the robust flavors that we are about to infuse.
Garlic, an essential component of this recipe, adds a rich and aromatic depth to the dish. Sliced thinly and fried in cooking oil until golden brown, the garlic becomes irresistibly fragrant, releasing its natural oils and enhancing the overall flavor profile. Alongside the sliced garlic, we also incorporate garlic stalks, which add a delightful crunch and a mild hint of garlic flavor. This combination creates a symphony of garlic goodness that perfectly complements the tender scallops.
To add an extra layer of complexity, we introduce spicy bean paste. This ingredient adds a fiery kick that elevates the dish to new heights. The spicy bean paste, combined with soy sauce, lemon juice, and cooking sake, forms a tantalizing sauce that beautifully coats the scallops, infusing them with a delightful balance of heat and tang.
Now, let’s talk about the cooking process. This recipe is best prepared using a wok, which allows for high-heat cooking and quick stir-frying. The wok’s curved shape and wide surface area ensure that all the ingredients are evenly cooked, creating a harmonious blend of flavors and textures.
To begin, fry the sliced garlic in cooking oil until it turns aromatic and begins to brown. This step releases the garlic’s natural oils, infusing the oil with its delicious essence. Next, add the garlic stalks and sauté them until they begin to soften, adding a delightful crunch to the dish. Once the garlic and stalks have cooked to perfection, it’s time to introduce the star ingredient – the sea scallops. Sauté them until they turn white and are no longer translucent, ensuring they are cooked through while maintaining their delicate texture.

Finally, it’s time to bring all the flavors together. Add the soy sauce, lemon juice, cooking sake, and spicy bean paste to the wok, allowing them to meld with the scallops and garlic. The sauce will coat the scallops beautifully, infusing them with a harmonious blend of savory, tangy, and spicy flavors. Let the dish simmer for a few minutes, allowing the flavors to marry and the scallops to reach their perfect tenderness.
When it’s time to serve, you’ll be greeted with a vibrant and aromatic dish that will impress both your taste buds and your guests. The combination of tender scallops, fragrant garlic, and spicy bean paste creates a symphony of flavors that will transport you to culinary bliss.
