Mountain Plums French Toast Japanese Style

There is nothing I like to do more on a Sunday then enjoy a relaxed brunch with my family. And everybody in my house loves French Toast! This sweet and sophisticated French Toast uses freshly baked thick-cut Japanese Shoku-pan (white bread) and is absolutely melt-in-your-mouth delicious.

This sweet and sophisticated recipe uses milk bread, Japanese thick-cut white bread, which is soaked in a lovely spiced egg mixture and left to sit for several hours to allow the egg mixture to be totally absorbed.  It’s cooked in butter and the outside of the toast is crunchy and sweet, while the inside has the consistency of custard.

The adults in my house normally top the French Toast off with some powdered sugar, and my daughter loads it up with maple syrup.  When served with fresh fruit and coffee, it makes a satisfying and delicious Sunday brunch meal that will bring your family together over and over again.

Mountain Plums French Toast Japanese Style

The thick and delicious French Toast is made by whisking eggs and milk together with sugar and spice.  Soft white bread is added to the mixture and allowed to sit in the refrigerator for at least four hours, although overnight is best.  Once the toast is ready, it’s fried over medium heat until the outside is crunchy and browned.  Then it’s flipped and finished.  I use bread that it at least 1/2 inch thick, although 3/4 inch slices work even better.  And be sure not to cut the edges off the bread – when cooked they provide a wonderful crunch to the meal.

Ingredients:

  • 3 eggs
  • 1/2 cup milk
  • 1 TBSP brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1/8 tsp ground nutmeg
  • 2 TBSP butter
  • 2 thick cut slices of soft, freshly baked white bread

Instructions:

  • Mix all the ingredients except the bread and butter into a large bowl.

  • Cut each slice of bread into 6 equal pieces.

  • Add the bread into the mixing bowl being sure to completely drench each piece.  Gently toss the bread in the remaining mixture.  Do not allow it to break apart.

  • Cover and Refrigerate for at least 4 hours- overnight is better.

  • Melt 2 tsp butter in a fry pan.  Add 3 pieces of the French toast bread to the pan.  Sauté for 2-3 minutes until the outside begins to brown.

  • Turn and cook for 2-3 minutes more.

  • Repeat cooking process for the remaining batches of toast.
  • Serve.  Top with confectionery sugar and fruit, or maple syrup.

Notes:

  • Sugar and spice and everything nice!  You can play around with the spices to get the toast just the way you want it.
  • Make sure to use brown sugar and not white table sugar- the brown sugar caramelizes on the toast and is absolutely delightful!
  • You can leave the bread soaking in the egg mixture for up to a day in the refrigerator.  The longer it soaks, the creamier the inside of your toast will be.
