Ingredients:

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup olive oil
  • 8 cloves garlic, minced
  • 4 tablespoons lemon juice
  • Shawarma Spice (see below)
  • Cooked Rice
  • Toppings (such as lettuce, tomatoes, cucumbers, onions, tahini sauce, etc.)

Shawarma Spice

  • 4 teaspoons ground cumin
  • 4 teaspoons ground paprika
  • 2 teaspoons ground coriander
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper

Instructions:

  • Prepare the Shawarma Spice by mixing the ingredients in a bowl.
  • Combine in the olive oil, minced garlic, and lemon juice. Mix well to make the marinade.
  • Cut the chicken thighs into thin strips and remove the skins.  Add them to the marinade. Make sure all the chicken is coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or overnight for best results (or use a vacuum marinator if desired).

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Thread the marinated chicken onto skewers, leaving a small space between each piece of chicken.

  • Place the skewers on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and nicely browned.
  • Remove the chicken from the skewers and let it rest for a few minutes.

  • Serve the grilled chicken over a bed of cooked rice.
  • Add your desired toppings, such as lettuce, tomatoes, cucumbers, onions, tahini sauce, etc., on top of the chicken.
  • Optionally, you can drizzle some additional sauce or marinade over the chicken and rice for extra flavor.
  • Serve immediately and enjoy your homemade Chicken Shawarma!

Notes:

  • Marinate the chicken for at least 2 hours to ensure maximum flavor.
  • Add more cayenne pepper for an extra burst of heat.
  • Cook the rice separately and fluff it with a fork before serving to prevent clumping.
  • Serve the grilled chicken with a side of fresh hummus for a refreshing and delicious complement.
