- 1/4 cup kuzuko (arrowroot starch)
- 1/4 cup sugar (adjust to taste)
- 2 cups water
- Crushed peanuts for topping (optional)
Instructions:
- In a small bowl, dissolve the kuzuko in 1/2 cup of water. Stir well until smooth with no lumps.
- In a saucepan, combine the sugar and 1 1/2 cups of water. Bring the mixture to a boil over medium heat, stirring until the sugar is completely dissolved.
- Slowly add the powdered peanut butter to the saucepan, whisking continuously to prevent lumps from forming.
- Gradually pour the kuzuko mixture into the saucepan, stirring constantly. Continue to cook the mixture over low heat, stirring gently, until it thickens to a custard-like consistency. This should take about 5 minutes.
- Remove the saucepan from the heat and let the mixture cool slightly. Pour the mixture into individual serving dishes or a single mold. Allow the tofu mixture to cool to room temperature, then refrigerate for at least 2 hours to set.
- Once the Peanut tofu is set, remove it from the molds and garnish with crushed peanuts if desired. Serve chilled.
