– 1/2 cup unsalted butter
– 1/2 cup packed brown sugar
– 1/2 cup granulated sugar
– 1/2 cup heavy cream
– 1/2 cup light corn syrup
– 1/2 teaspoon vanilla extract

1. Grease a baking pan. Set it aside for later use.

2. In a large saucepan over medium heat add the butter, brown sugar, granulated sugar, heavy cream, and light corn syrup. Stir until the sugars have dissolved and all the ingredients are well combined.

3. Attach a candy thermometer to the side of the saucepan, making sure it does not touch the bottom. Bring the mixture to a boil, stirring occasionally.

4. Allow the mixture to boil about 20-25 minutes until the candy thermometer reads 245°F (118°C) for a soft caramel consistency. If you prefer a firmer caramel, you can let it reach a higher temperature, but do not exceed 250°F (121°C).

5. Once the desired temperature is reached, remove the saucepan from the heat and stir in the vanilla extract.

6. Pour the hot caramel into the prepared baking pan and let it cool at room temperature for about 4 hours.~

7. Once the caramel is firm, remove the caramel from the pan. Place it on a cutting board and cut it into bite-sized pieces or desired shapes.

8. Wrap each piece in wax paper if desired.
