Ingredients:

  • 1 cup Graham flour
  • 1/3 cup ghee (plus 1-2 tablespoons extra if needed)
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey
  • Pinch of salt
  • 1 cup white flour
  • 1 tsp baking powder (optional)

Instructions:

  • In a large, deep non-stick pan, heat 1/4 cup of ghee over medium-low heat.
  • Add the graham flour to the pan and begin roasting. Stir continuously to prevent burning. Roast for about 8-10 minutes or until the flour gives off a nutty aroma and turns slightly darker in color.

  • Remove the roasted flour from the heat and transfer it to a large mixing bowl. Allow it to cool for a few minutes.
  • Add the light brown sugar, cinnamon, and salt to the roasted flour. Mix well to ensure even distribution of the dry ingredients.
  • In a small saucepan, gently heat the remaining ghee (about 1-2 tablespoons) with the honey until well combined. Remove from heat and stir in the vanilla extract.
  • Pour the warm ghee-honey mixture over the dry ingredients in the bowl. Mix thoroughly using a spatula or your hands until the mixture comes together and can be shaped. If the mixture seems too dry, add a little more melted ghee, one teaspoon at a time.
  • Mix in the white flour.  Add in the baking powder (optional) for softer cookies.  Mix well until all ingredients are combined.

  • Place the balls on baking pan lined with parchment paper.  Flatten by pushing down gently.

  • Remove from oven and let the cookies sit for 20 minutes.
  • Once cooled, store the Graham Cracker Cookies in an airtight container at room temperature for up to a week.
