Ingredients:

  • 1 1/2 lbs ground pork
  • 12 oz smoked duck (finely chopped)
  • 12 oz Roast Pork (finely chopped)
  • 1 tablespoon fresh thyme leaves (chopped)
  • 1/4 cup brandy
  • Salt and pepper to taste
  • 4 oz butter, softened
  • 8-10 slices of bacon

Instructions:

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground pork, chopped smoked duck, fresh thyme, brandy, and softened butter. Season the mixture with salt and pepper to taste. Mix well until all the ingredients are evenly combined.

  • Line a loaf pan with the bacon slices, allowing them to hang over the edges of the pan.

  • Spoon the pork and duck mixture into the lined loaf pan, pressing it down to ensure there are no air pockets.

  • Fold the overhanging bacon slices over the top of the pâté mixture to encase it completely.
  • Cover the loaf pan with aluminum foil and place it on a baking sheet to catch any drips.
  • Bake the pâté in the preheated oven for 1 to 1.5 hours, or until the internal temperature reaches 160°F (71°C).
  • Once cooked, remove the pâté from the oven and allow it to cool to room temperature.
  • Once cooled, refrigerate the pâté for at least 4 hours, or preferably overnight, to allow it to set.
  • To serve, carefully unmold the pâté from the loaf pan and slice it. Serve with crusty bread, crackers, and your favorite condiments.  Try my thyme drizzle as an accompaniment (see the notes for the recipe).

Notes:

  1. Use a meat thermometer to ensure the pâté reaches an internal temperature of 160°F (71°C) for safe consumption.
  2. Store the pâté in an airtight container in the refrigerator for up to 3-4 days to maintain its freshness.
  3. For a flavor variation, consider using a combination of different herbs such as rosemary or sage.
  4. If smoked duck is not available, smoked chicken can be used as a flavorful substitute.
  5. To enhance the presentation, consider garnishing the pâté with a sprinkle of fresh thyme leaves before serving.
  6. Optional Thyme Drizzle….   Combine the following ingredients in a bowl and whisk together until smooth, then refrigerate for at least 2 hours to chill and let the flavors combine: Mayonnaise – 1/2 cup / Rice vinegar – 2 tablespoons / Soy sauce – 2 tablespoons / Ground Thyme – 1 tsp /Honey – 2 teaspoons / Green Food coloring – as desired
